Authentic Greek Salad (Horiatiki)

 A traditional Greek village salad made with ripe tomatoes, cucumber, red onion, Kalamata olives, feta cheese, olive oil and oregano.

Ingredients
  

  • 4 medium-ripe tomatoes cut into wedges
  • 1 English cucumber sliced into thick half-moons
  • 1 small red onion thinly sliced
  • 1 green bell pepper sliced into rings (optional but traditional in many regions)
  • 16-20 Kalamata olives
  • 7 oz 200 g block of feta cheese
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar optional
  • 1 tsp dried Greek oregano
  • Sea salt to taste

Method
 

  1. Wash and thoroughly dry all vegetables.
  2. Cut tomatoes into large wedges.
  3. Slice cucumber into thick half-moons.
  4. Thinly slice the onion.
  5. Combine tomatoes, cucumber, onion and pepper in a large bowl.
  6. Scatter olives over the vegetables.
  7. Place the block of feta on top.
  8. Drizzle with olive oil.
  9. Add vinegar if using.
  10. Sprinkle oregano over the feta.
  11. Season lightly with salt.
  12. Serve immediately without excessive tossing.

Notes

  • Choose the ripest tomatoes you can find - this matters more than any other ingredient.
  • Block feta is traditional; pre-crumbled feta is drier and less authentic in presentation.
  • Lettuce is not part of authentic Horiatiki.
  • Vinegar is optional and varies by region.
  • Serve immediately for the best texture.
