Ingredients

Core:
  • 1 cup 225 g plain Greek yogurt, preferably thick and unsweetened
  • 1 tablespoon 21 g honey
  • ¼ cup 28 g walnuts, roughly chopped
  • ¼ teaspoon ground cinnamon optional
  • Pinch of fine sea salt optional
Optional toppings:
  • ½ cup fresh berries
  • ½ fresh fig sliced
  • 2 tablespoons pomegranate arils
  • 2 tablespoons granola
  • 1 teaspoon chia or ground flaxseed

Method

Prepare the walnuts.
  1. Roughly chop the walnuts. For extra flavor, toast them in a dry skillet over medium-low heat for 3-5 minutes, stirring frequently until fragrant. And let them cool briefly.
Add the yogurt.
  1. Spoon the Greek yogurt into a serving bowl and smooth the top with the back of a spoon.
Add the honey.
  1. Drizzle the honey over the yogurt, add cinnamon and a tiny pinch of salt if using.
Add the walnuts.
  1. Scatter the walnuts over the top, keeping some pieces visible for texture.
Add optional toppings.
  1. Add fresh fruit, pomegranate, granola or seeds if desired. Now put crunchy toppings on last.
Serve.
  1. Serve immediately for the best contrast between creamy yogurt, sticky honey and crunchy walnuts.

Notes

Recipe Notes

  • Best yogurt: Use plain and unsweetened Greek yogurt so the honey controls the sweetness.
  • For extra crunch: Toast the walnuts before assembling.
  • For meal prep: Keep walnuts and granola separate until serving.
  • For less sweetness: Reduce the honey and use fresh berries for natural sweetness.
  • For a looser texture: Stir a small splash of milk into the yogurt before assembling.
  • Authenticity note: The flavor combination draws from the Greek pairing of yogurt, honey and walnuts; the modern customizable breakfast-bowl format is an adaptation.
  • Storage: Refrigerate assembled leftovers promptly, but expect crunchy toppings to soften.
